A high hollow grind on the right (top) side of the blade creates an air pocket to “lift” the fillet, while the left (bottom) side of the blade is taper ground, so it slides against the skin without digging. This improved blade grind creates an air pocket to lift and “float” fillets off, while the flat taper ground side glides smoothly across the skin.
